TASTY TUESDAY~ Chocolate Chip Banana Apple Muffins!


SAY WHAT?! I've taken a WHOLE new twist on my FAVORITE MUFFINS from Fixate!!  I've added some nuts, and I've added some chocolate chips!! I use Enjoy life because I try my HARDEST to avoid soy (there is soy lecithin in chocolate) unless it's guaranteed to be organic!

The count for the muffins is usually 1 purple and 1 blue~ since I've added nuts and chocolate, I'll take to add a spoon as well.

Why a spoon?  Why not just an orange?  WELL~ we're not adding a lot of orange, nor are we adding a lot of nuts.  The total per muffin is probably about 1 tsp.

If you've been following the 21 Day Fix meal plan long enough you've realized that the blue container, the orange container, and the spoons are technically ALL fats, except they're "different" fats that are naturally measured by different volumes...  That being said, if you're going to make these, and use the chocolate chips and nuts, just don't over do it, and count them as 1 purple, 1 blue, and 1 tsp.\





Ingredients:
    21 day fix, 21 day fix approved, 21 day fix approved muffins, 21 day fix muffins, 21 day fix treats, fixate, fixate banana apple muffins, muffins,
  • 1 1/2 c almond flour
  • 1/8 t Himalayan sea salt
  • 3/4 t baking soda
  • 1 T melted butter, cooled (I used coconut oil)
  • 2 large eggs
  • 1 cup mashed bananas (about 2)
  • 1/2 c chopped apple (I used organic gala)
  • 1/4 cup chocolate chips
  • 2 Tbsp chopped pecans

Directions: 
Preheat oven to 350.
Combine the almond flour, salt and baking soda. In a medium bowl,
whisk together the butter and eggs and then stir into the dry
ingredients. Stir in the bananas and fold in the apple. Spoon
batter into muffin cups (makes about 10-11) and bake for 18-22 minutes.
*Store in the refrigerator~ freeze within 4 days if you're not able to eat them all... THIS SHOULD'NT BE AN ISSUE! <3 <3
