Meal Prep Sunday & PEANUT BUTTER JELLY TIME!!!

Today... I felt SO unprepared when it was time to meal prep!!!! I ALWAYS prepare my menu for the week, and I did so this week, but with 22 Minute Hard Corps in mind... AND with other meals in mind.... Other ones than I decided to make... Why is that?  Because I needed to be resourceful!!  I had left over sweet potatoes... SO instead of using rice for my side, I used sweet potatoes, and instead of buying lettuce and going all fancy like I planned too... I just used chicken, and veggies that I already had... I decided to save money this week....

NEXT week, I'll use the menu I planned out for myself this week ;) hehe BECAUSE WELL.. I was pretty flippin excited about trying all of the AWESOME recipes that Tony has set out in the nutrition guide for 22MHC!!

SO Here's what I made!!!!!!

I made Matt one of his usuals: sausage and peppers.
SUPER SIMPLE!!!

Super Simple n Healthy Sausage n Peppers
Serves: 5
Container Count: 1 red, 1 green, 1/2 purple, 1/2 tsp
**pair with 1/2 cup cooked rice, + 1 yellow

Ingredients:

  • 1 lb nitrate free sausage or turkey sausage 
  • 2  bags frozen pepper/onion mixture
  • 1-15 oz can no salt added tomato sauce OR no salt added diced tomatoes (your preference, I use whichever I have at the time..)
  • 1 Tbs EVOO
  • 1 clove garlic or 1 tsp. minced garlic
  • 1/4 tsp onion powder
  • 1/8 tsp garlic powder
  • 1/4 tsp paprika
  • 1/4 tsp oregano
  • 1/8 tsp red pepper flakes
  • sea salt and pepper to taste
Directions:
  1. heat oil in large skillet 
  2. cook sausage throughly over medium/high heat, slice up
  3. add peppers and onions  
  4. add sauce/tomatoes
  5. add garlic, and spices
  6. simmer on medium for 10 minutes, reduce to low for 10 more minutes
**Portion out into 5 even portions**
**Cook rice to pair with it for food prepping~ pair it with 1/2 cup cooked portions**


I made myself chicken, three different types... Nothing too fancy!!! Lemon garlic, garlic tumeric, and dynamite!!  I use FLAVOR GOD!! Love Flavor God! <3 <3 I paired it with my FAVORITE SWEET POTATOES, and green beans! <3 <3

Apple Pie and Cayenne Sweet Potatoes
Ingredients:
  • 2-3 medium sweet potatoes
  • spray coconut oil
  • apple pie spice (or pumpkin pie, or cinnamon)
  • sea salt
  • pepper
  • parsley
  • cayenne pepper

Directions:
  • pre-heat oven to 350*
  • wash and peel sweet potatoes
  • slices potatoes into "coins"
  • spray 9x13 glass dish w/ coconut oil
  • lay potatoes in dish
  • spray potatoes with coconut oil
  • sprinkle potatoes with all seasonings
  • bake potatoes for 35 minutes, or until fork pierces through gently
  • portion out about 4 "coins" to equal one "yellow" if following the 21 Day Fix! :)

I obviously needed to make OATS!!! As I've said, I've been LOVING MY OATS!!!!!!

SO I did something a little bit different today with them.. I didn't want banana... I didn't fresh berries.. I DID want peanut butter.. and I did want berries.. BUT I wanted berries IN my oats.. and HOT! :)

SOOO I made PEANUT BUTTER AND JELLY OATS!! <3 <3 <3 

It's PEANUT BUTTER JELLY TIME! <3 <3 
Peanut Butter & Jelly Protein Oats

Ingredients: 
  • 1 1/2 cup steal cut oats
  • 2 cups water
  • 1/2 cup liquid egg whites
  • 1 tsp coconut oil
  • 2 Tbsp. natural peanut butter
  • 1 tsp cinnamon 
  • 1 Tbsp. ground Flax seed


  • 1 tsp stevia or 3 drops liquid stevia
  • 1 cup mixed fresh/frozen strawberries/blackberries
  • 2 1/2 tsp natural creamy peanut butter*
  • 2 1/2 tsp agave or honey*

Directions:
Put water and oats in medium sauce pan, and cook for 5-10 minutes, add in peanut butter, and cook 2 more minutes.  Add in coconut oil, cinnamon, and stevia.  Stir in egg whites, and continue to stir, then mix in fruit! Continue cooking on stove top until bubbly and mushy looking! Portion out into 1/4 cup portions (or use your yellow container if you're following the 21df), top with 1/2 tsp peanut butter and agave/honey, cinnamon, and 1-2 Tbsp water....

Stores in fridge for 5 days, microwave for about 40 seconds or so when you're ready to indulge! <3
