~ TASTY TUESDAY!!!!~ Chocolate Protein Crepes

I've always been a HORRIBLE pancake maker... SO when I thought about making crepes.. which are just a THINER version of pancakes... I thought to myself, "boy.. this oughta be FUN!!!! WELL guess what?! They turned out AMAZING~ AND they tasted EVEN better than they looked.. as if that were even possible!!!

These recipes are modified from Autumn Calabrese's Fixate version from her Fixate cookbook (which is absolutely amazing by the way!! It's also available with portion control containers!)

 Chocolate Berry Crepe
This was my first attempt at making crepes, EVER~ and I think I did a pretty awesome job.. Even better yet~ they're SO GOOD FOR YOU!! I used Shakeology rather than a chocolate protein powder, because that's just how I roll... BUT feel free to use what you have!! If you'd like to use Shakeology, and you don't have any! Let me know! :) :)

Serves: 2
Prep Time: 15 minutes
Cooking Time: 12 minutes
Container Count: 1/2 red, 1/2-1 purple, 1 tsp

Ingredients: 

  • 1/2 cup liquid egg whites (whites of 3-4 large eggs)
  • 3/4 scoop chocolate protein (OR Shakeology :) :)  :) :) !)
  • 1 tsp stevia (or 4 drops) (divided use)
  • 1/2 cup plain 2% Greek yogurt
  • 1/4 tsp pure vanilla extract
  • 1 tsp raw honey or agave + 1 tsp for drizzle
  • 1 cup fresh mixed berries (or 2 cups depending on preference)
  • Coconut oil spray

Directions:
  1. Combine egg whites, protein powder (or Shakeology), with 1/2 tsp or 2 drops of stevia in medium bowl, mix well.
  2. Heat small or medium non-stick skillet, lightly coated with spray over medium-high heat.
  3. Poor half of the batter into the skillet (about 1/4 cup); cook 1-2 minutes, or until bubbles form on top.  Flip with rubber spatula, and cook for another 30 seconds-1 minute and remove.
  4. Repeat with remaining batter for additional crepe.
  5. Combine yogurt with 1/2 tsp stevia, pure vanilla, and 1 tsp honey or agave in a small bowl; mix well.
  6. Fill crepes evenly with yogurt, and top and 1/2 cup berries each.
  7. Fold over, and drizzle with 1/2 tsp honey or agave. 
  8. ENJOY! <3 <3 


Peanut Butter Banana Crepes

Prep Time: 15 minutes
Cooking Time: 12 minutes
Container Count: 1/2 red1 purple1 tsp

Ingredients:

  • 4 tsp powdered peanut butter
  • 1 tsp raw honey or agave + 1 tsp for drizzle
  • 1 banana
  • Coconut oil spray

Directions:
  1. Combine egg whites, protein powder (or Shakeology), with 1/2 tsp or 2 drops of stevia in medium bowl, mix well.
  2. Heat small or medium non-stick skillet, lightly coated with spray over medium-high heat.
  3. Poor half of the batter into the skillet (about 1/4 cup); cook 1-2 minutes, or until bubbles form on top.  Flip with rubber spatula, and cook for another 30 seconds-1 minute and remove.
  4. Repeat with remaining batter for additional crepe.
  5. Combine yogurt with 1/2 tsp stevia, pure vanilla, 1 tsp honey or agave, and 2 tsp powdered peanut butter in a small bowl; mix well.
  6. Fill crepes evenly with yogurt, and top and 1/2 banana (save some for topping on each if you'd like!)
  7. Add water to remaining powdered peanut butter (about 4 tsp, or until it reaches a "drizzle" consistency""
  8. Fold over, top with banana, drizzle with 1/2 tsp honey or agave and peanut butter mixture.
  9. ENJOY! <3 <3
