Tasty Tuesday!~ Crockpot Balsamic Chicken!

Sometimes you just need something you could toss in the Crockpot, set it, and FORGET IT!!! I totally understand!!!!!  That's what I did on Saturday night!! Why on Saturday NIGHT?!  WELL, I made this original recipe on Saturday night so that it was all set for me to portion out on Sunday for my weekly meals!!!! Why Sunday!! WELL, that's SUNDAY FUNDAY~ AKA when I food prep like a BOSS!! <3 <3 

Here's what I did to make this DELECTABLE MEAL, and guess what?! It's even 21 Day Fix APPROVED!! I'll provide you with the "container counts" if you're following the 21 Day Fix... and if you're not, then you ought find out how it's transformed MY LIFE, and do so!! :)

Crockpot Balsamic Chicken

Prep Time: 15 minutes
Cook Time: 8 hours low
Servings: 8 servings
Serving Size: 3/4 cup (4 oz) chicken, 1 cup veggies, 1/2 cup rice/potatoes
Container Count: 1 Red, 1 Green, 1 tsp (1 Yellow if paired with rice/potatoes)

  • 2 lbs. boneless, skinless chicken breasts, thinly sliced
  • 1 1/2 cups baby carrots
  • 1 1/2 cup green beans (fresh or frozen)
  • 1 cup peas (frozen)
  • 2  zucchini, cut into coins, then cut in half
  • 1 small onion, sliced and cut into strips
  • 2 tsp. prepared minced garlic (or 1 clove, minced)
  • 1 tsp. dried thyme
  • 1/2 tsp. onion powder
  • 1/8 tsp. garlic powder
  • Himalayan sea salt and fresh ground pepper to taste
  • 1-15 oz can low sodium chicken broth
  • 2 Tbsp EVOO
  • 3/4 cup balsamic vinegar
  • 1 Tbsp low- glycemic agave (or honey)
  • Spray EVOO

  1. Prepare the Crockpot using spray EVOO and/or a liner (I spray the liner too!)
  2. Add in all veggies and onion, and season with: minced garlic, thyme, garlic powder, salt, and pepper
  3. Mix Veggies around
  4. Layer chicken on top of veggies
  5. Pour chicken broth, and balsamic vinegar on top of chicken
  6. Push chicken down into the veggies (until it's almost all covered in liquid)
  7. Sprinkle onion powder, a little garlic powder, thyme, salt, and pepper on chicken
  8. Drizzle on 2 Tbsp. EVOO and 1 Tbsp agave (or honey)
  9. Place lid on, set for 8 hours on low, AND FORGET IT! <3 
Serve with rice or roasted red potatoes~~ Drizzle juices over the rice/potatoes!!
