Happy Taco Tuesday! :) :)

Tacos are one of my FAVORITE FOODS!!! In fact.... SECRET... Taco Bell is the ONLY fast food I REFUSE to give up! -_- Yes... Even though I know how horrible it is.. I simply cannot give it up!  I only treat myself to it once every few months or so, or if I'm craving it, that's just that! :D hehe

So, when making tacos at home, you could either MAKE IT or BREAK IT!!  Sometimes it's not even worth making them at home as opposed to going out for them if you're going to just "go all out," and load them with cheese, sour cream, white floured tortillas, and more... OR worse.. USE A BOX of the prepared taco seasoning, and sauces... AHH!!!!  The sodium intake in those are absolutely insane, and the corn the shells are made from are GMO'd...but we don't even think twice before making them most times, because they're quick... and they're simple... and we live a life where those things are very important to us!!!

BUT~ guess what... Lucky for you, I have a recipe that is JUST about as quick (unless you're going all out with the "sour cream" and guac too!!) and simple as it gets!!!!

I like to use Flavor God Taco Seasoning for my tacos!! BUT if you're not familiar with that, or if you don't want to buy it, THEN this is an AMAZING alternative!!!!!!!!

Taco Seasoning

  • 2 tsp. chili powder
  • 1 1/2 tsp. paprika
  • 1/2 tsp cumin
  • 1 tsp. onion powder
  • 3/4 tsp garlic powder
  • 1/4 tsp sea salt
  • 1/8 tsp pepper
  • Dash cayenne pepper to your preferred level of heat 
**Combine all ingredients in a small bottle or jar.  Store in an air tight container or mason jar if there's excess.  Double or triple recipe to have extra for future use. 

Greek Yogurt Sour Cream
Serves-4 (1/8 cup each)
  • 1/2 cup 2% plain Greek yogurt
  • 2 tsp lemon juice
  • 1/8 tsp sea salt
  • 1/8 tsp black pepper
**Combine all ingredients in small bowl.

Creamy Guac
  • 1/2 of an avocado, mashed
  • 1 Tbsp. 2% plain Greek yogurt
  • 1/2 tsp. tabasco sauce (or like)
  • 1/4 tsp. lemon juice
  • 1/4 tsp. lime juice
  • 1/8 tsp. garlic powder 
  • 1/4 cup organic cheddar cheese, shredded 
  • 3 cherry tomatoes, diced
  • Sea salt and pepper to taste

**Combine all ingredients in small bowl.

Easy Peasy Turkey Tacos
Serves: 4
Prep Time: 10 mins
Cook Time: 15 mins

  • 1 lb. lean ground turkey (COULD substitute a lead ground grass fed beef)
  • 2 Tbsp. taco seasoning (see above, or use a low sodium favorite)
  • 2 tsp EVOO
  • 2 bell peppers, sliced (red, orange, or yellow)
  • 1/2 medium onion, sliced (optional)
  • Lettuce leave (like romaine or Bibb) OR 6 inch non-GMO corn tortillas (x8~ 2 per serving)
  • 1/4 cup organic cheddar cheese, shredded 
  • Toppings of choice (cherry tomatoes, lettuce, Sirracha, fresh salsa, homemade sour cream, guac, etc.)
  1. Heat EVOO in large skillet, brown turkey or beef.  Season with taco seasoning.  Add in peppers, and cook until soft. 
  2. Layer meat, peppers, and onions on either lettuce leaves or tortillas.  
  3. Top with cheese, and other toppings.
  4. ENJOY! <3 <3
**Serve with 1/4 cup rice mixed with salsa or 8 blue corn chips and fresh salsa or a salad!

Container Counts: 
Tacos on Lettuce Leaves: 1 red, 1 1/2 green, 1 blue, 1/2 tsp
Tacos on Tortillas: 1 red, 1/2 green, 1 yellow, 1 blue,  1/2 tsp

**Depending on toppings, and sides. add 1/2 purple for salsa , 1 yellow for corn chips, 1 yellow & 1/4 purple for rice w/ salsa. **
