Orange Ginger Ahi Tuna~ Happy Tasty Tuesday!

Have you always wanted to try something, but just never did?  I'm not sure why I never tried Ahi Tuna... I LOVE tuna fish! BUT they're totally different!!!  I think it was the concept that it's usually cooked to be "medium," or translucent-like on the inside... That might have creeped me out....

BUT... When grocery shopping last week I took a plunge.. and bought some!! It probably wasn't the BEST tuna I could've bought, but who knows... it was sure amazing!!

I didn't really look up a fancy recipe or anything to use; I just made something yummy up... I love doing that! :)

Here's what I did~ AND it was good enough to make TASTY TUESDAY!!!!!

Orange Ginger Ahi Tuna

21 day fix, 21 day fix approved, healthy eating, clean eating, healthy ahi tuna, ahi tuna recipe, orange salsa verde, whole goods, 21 day fix extreme
Serves: 2
Prep Time: 10
Cook Time: 10-18 minutes

Ingredients:

  • 2-4oz Ahi Tuna Steaks
  • 1 tsp minced garlic
  • 1/4 tsp ground ginger (or 1/2 tsp minced)
  • 1/2 tsp cilantro
  • 2 tsp EVOO
  • salt & pepper to taste
  • non-stick cooking spray
Directions: 
  1. Pre-heat oven to 400 degrees
  2. Prepare a baking dish (9x7 or so), with non-stick cooking spray
  3. Sprinkle salt & pepper on tuna
  4. In small bowl, put EVOO, garlic, ginger, and cilantro, and mix
  5. Divide mixture between two pieces of tuna
  6. Bake at 400 degrees for 10-18 minutes depending on your preference of doneness

Meanwhile....

Make this amazing Orange Salsa Verde for a topping!! <3 

Orange Salsa Verde


Ingredients:
  • 1 clementine
  • 1 medium tomato
  • 1/2 small onion (or to taste)
  • 1 tsp cilantro
  • 1/4 tsp ginger
  • salt & pepper to taste
  • 1 1/2 tsp EVOO
Directions:
  1. Peel and pull clementine apart; slice each section in half
  2. Dice up tomato, removed the seeds
  3. Dice up onion
  4. Add all to a small bowl
  5. Add in spices, and EVOO
  6. Mix and refrigerate while fish is cooking, and until ready to serve
  7. Divide among the two pieces of fish

Container Count:: 1 red, 1/4 purple, 1/2 green, 2 tsp
