Sweet Potato and Beet Spirals~YUM!

I just got this fancy dancy spiralizer.... SO I needed to use it!! :) AND sweet potatoes and beets FIT!! Unlike the old one I had.. where I could ONLY use it for zucchini, and other veggies in that shape.. LOL :p

SO.... I invented.... THIS! :)

Sweet Potato and Beet Spirals

What you Need
-Spiralizer (either the larger one you can get on Amazon, or the one from Pampered Chef)
-baking dish
-1 medium/large sweet potato, peeled, and cut in half
-1 large beet, peeled, ends trimmed off flat
-1/2 medium onion, diced
-4 tsp. EVOO
-1 Tbsp. parsley
-dash cinnamon
-1 tsp. minced garlic
- Himalayan Sea Salt to taste






What you Need to Do
  1. Pre-heat oven to 350
  2. Use spiralizer to spiralize sweet potato and beet, toss in dish (when you can't spiralize the ends, just chop them up small)
  3. Toss in the diced onions
  4. Drizzle with EVOO, and seasonings
  5. Bake at 350 for 20 minutes, mix, and continue baking an additional 20 minutes
  6. Enjoy with chicken, fish, or steak! YUM!!!
Serves 4
