I wanted a mint today at work... and then I noticed that although they're Organic Gingermints from Trader Joe's.. the FIRST ingredient was "organic cane sugar..." -_- SO.. I just pawned them off on my students.. They hated them. HA! #ginger
Anywho... Basically.. Unless you're a TOTAL hater on the fact that I'm adding Shakeology into the mix.. [I'll share the recipes I've been mixing up in my week recap on Sunday!! SO GOOD!-- I'm having it as my post-workout meal!] I've been a #whole30angel the last 2 days --- O.K.. SO I STILL NEED TO MAKE IT THROUGH DINNER TONIGHT! :)

Slow Cooker Pulled Pork Tacos
Ingredients for Pork:
- Organic, hormone free Pork Tenderloin - weight to your preference
- 1 cup compliment beef broth
- 1/4 cup coconut aminos
- 1 Tbsp. organic minced garlic
- 1 Tbsp. organic avocado oil, or coconut oil (melted-- for crock pot)
- Fresh Cilantro to taste
- Ground black pepper
Line crock pot with liner (if preferred), brush with oil, place pork loin in crock pot, pour broth and aminos on it. Sprinkle it with garlic, cilantro, and pepper. Cook on low for 6-6 1/2 hours.
When complete, switch to "warm" and shred pork using two forks.
Add the following the the pork:
- 1 small can green chillies
- 1 tsp cumin
- 1 tsp paprika
- 1 Tbps. apple cider vinegar
Let simmer on low for 15-20 minutes.
- Boston or Romaine lettuce
- Tomatoes, diced
- Guacamole or Avocado
- Salsa Verde
- Broccoli Slaw
**You can make them into tacos, or into a salad. For dinner I did tacos on Monday, but for lunch on Tuesday, I used leftovers for a salad!! SO GOOD!!!
